Easter Paska (sweet)


Ingredients (24 pcs):

100 ml milk
3 g yeast
5 Tbsp sugar
1 Tbsp vanillin sugar
100 g cranberry
or raisin
200 g soft butter
500 g flour
3 egg yolk
200 g cottage cheese
salt
1 Tbsp rum (optional)




















Dissolve yeast in lukewarm milk + 1 Tbsp sugar.
Let it alone for 5 minutes.
Add all other ingredients to the milky mix except 1 egg yolk and knead it on floured surface until smooth and no longer sticky, add more flour if necessary, then let it rise in warm draft-free area until doubled, about 1/2 hour.
Form balls and put them into muffin pan, decorate them (for the white roses I used 2 Tbsp flour knead with some water), brush them with the remaining yolk egg (but not the roses).
Bake them in a pre-heated 150 C hot oven for around 10-15 mins.

Sheep cottage cheese doughnut

Ingredients for 16 small balls:

1 egg
50 g sheep cottage cheese
50 g cottage cheese
4 Tbsp flour
1/2 tsp salt
1/2 packet baking powder (6 g)
dill (optional)

oil for deep frying

+ For serving
3 Tbsp sour cream
salt
1/2 teaspoon grated garlic or even less (taste it)
dill (optional)

Mix all ingredients (except oil) in a bowl and let the mix alone for 5 minutes then shape small balls using 2 teaspoons or your wet palm and fry them in the oil (180 C hot) on both sides (around 5 minutes only, till become gold).
Serve them with spicy sour cream or other dip...

Mini tiramisu cakes

Ingredients for 12 cakes:
Cake:
30 ladyfingers
200 ml coffee+milk
Cream:
100 gr mascarpone
1 egg yolk
2 Tblsp agave sirup (or sugar)
150 ml whipped cream
1/4 packet granulated gelatine
50 ml water
Decoration:
cocoa powder
coffe beans
(or strawberry and chocolate)

Pour the milky coffee into a bowl and soak the ladyfingers in it for a second then cut all of them into 2 parts. Put 5 half ladyfingers into a muffin baking pan (see the pics below) and a top of every 6th one into their middle. Get the gelatine melted in the water and get them hot then stir all the cream ingredients (except half of the whipped cream) with it. Pour the combined cream into the forms, cover them with the remaining whipped cream. Put the cakes into the fridge at least for 2 hours, decorate and enjoy them :)

Sheep cottage cheese scones

Ingredients (for 50-60 scones):

30 gr yeast
100 ml lukewarm milk
1 Tbsp sugar
200 gr melted butter
3 Tbsp olive oil
3 egg yolks
150 gr cottage cheese
150 gr sheep cottage cheese
500 gr flour
100 ml sour cream
1 Tbsp salt
(optional: some bacon or ham in small cubes)
150-200 gr grated cheese



Dissolve yeast in lukewarm milk + sugar.
Add all other ingredients to the milky mix except grated cheese and 1 egg yolk (and bacon or ham), knead it on floured surface until smooth and no longer sticky, add more flour if necessary, then let it rise in warm draft-free area until doubled, about 1/2 hour.
Roll out the dough to about 15-20 mm thick and spread with the 1/3 of the grated cheese (and all the bacon or ham), then roll up the dough again (pics 2-3 below) and let it raise for additional 20 minutes.
Roll out it again on a lightly floured surface, brush the top with egg yolk and spread with the remaining grated cheese. Cut small circles (pic 4) and put them onto a baking sheet covered with baking paper.
Bake them in a pre-heated 180 C oven for around 15-20 mins.

Tiramisu cake

Ingredients:
Cake:
24 ladyfingers
200 ml coffee+milk
Cream:
200 gr mascarpone
1 egg yolk
4 Tblsp agave sirup (or sugar)
150 ml whipped cream
1 packet granulated gelatine
100 ml water
Decoration:
cocoa powder
coffe beans
(or strawberry and chocolate)

Pour the milky coffee into a bowl and soak the ladyfingers in it for a second. Put 18-20 ladyfingers into a round form (see the pics below). Get the gelatine melted in the water and get them hot then stir all the cream ingredients with it. Pour half of the combined cream into the form, cover it with the remaining ladyfingers then pour the remaining cream onto the top. Put the cake into the fridge at least for 2 hours, decorate and enjoy it :)
